Does a creature with vigilance tap when it attacks?

Short answer
No. A creature with vigilance does not tap when it is declared as an attacker.

Normally, when you declare a creature as an attacker, it becomes tapped as part of the process of declaring attackers (CR 508.1f). Vigilance is a static ability that creates an exception to this rule, preventing the creature from being tapped when it attacks.

CR 702.20b states: "Attacking does not cause creatures with vigilance to become tapped." This means the creature remains untapped after being declared as an attacker, even though it is still legally attacking and contributing to combat.

This is relevant for several reasons: the creature can still block in a future turn if combat loops back (not applicable in normal turns, but relevant in multiplayer or with extra combat steps), it can still be tapped for mana or other activated abilities after attacking, and it is not a valid target for effects that require tapping an untapped creature.

Concrete example: You attack with Serra Angel, which has vigilance. After you declare it as an attacker in step CR 508.1, it is not tapped. After combat, Serra Angel is still untapped and could, for example, tap to crew a Vehicle or activate an ability that requires tapping it.

Note that vigilance only prevents the tap from the attack declaration itself. If another effect specifically taps the creature (e.g., an opponent plays Icy Manipulator), the creature will still become tapped normally.
